Honey and Banana Flapjacks Recipe

Flapjacks are one of my favourite snacks. When I was pregnant I had serious Flapjack cravings, so I was cooking a new batch every other day. I had to give so many away as I would have eaten the lot !!!
I'm not very good at sticking to any recipe, so this time, I combined a few ideas that I found in my recipe books and online.
Flapjacks are not known for their huge health benefits, especially with all that sugar and butter, so I like to add healthy snacks to make them into Energy Bars. 

My flapjack recipe this time is :
175g or 6oz Brown Demerara Sugar 
175g or 6oz Butter
2 tbsp Honey
1 tbsp Peanut Butter
2 ripe Mashed Bananas
Handful of Almonds (Chopped)
300g or 10oz Oats 

To start, preheat your oven to 160 degrees and gather all of your ingredients.

I love Morrison's Supermarket for their Oats as its sold in huge bags for better value and its the shop I use more than any.

The first thing I did was blitz a handful of almonds in my mini blender and mash the two bananas.

Then add the sugar, butter, honey and peanut butter in a saucepan and melt together.
Once that is all melted together, add the oats, almonds and mashed bananas and mix thoroughly.
Press the mix into a large greased baking tray. Use the back of a spoon to smooth over and make sure you push the mixture into the corners. My mix turned out to be 2cm thick.
Cook for 25 minutes or until brown and then leave to cool slightly in the baking tray.
I have a push up baking tray so it is easier to remove the huge flapjack. However, other suggestions are to cut the flapjacks whilst it is still in the baking tray. Alternatively, tip the whole thing upside down on a cutting board and it will come out easily. If it does not, the baking tray hasn't been greased enough.
Cut into the desired size. I prefer small pieces, as the kids have one with their breakfast.
The finished result is delicious.
These will taste and smell of banana, so if you're not a banana fan, just remove them. However, the banana is what makes the chewy and soft.......and absolutely delicious !!
