So now they have their own Coconut Milk I have been experimenting more with new flavours and combinations. In the winter or colder days I like to keep things chocolaty but when the sun is out I like to get all the tropical fruits out and pretend I'm lying on a beach doing absolutely nothing.
Vita Coco Coconut Milk has no added sugar and is gluten free and soy free, there are no added nasties.
As you can see the milk is thick and silky smooth. It tastes like a real coconut just in liquid form. It is 70% of the highest quality coconuts and tastes delicious and most certainly #tasteslikenoudder

I thought I would keep it simple this time around as not everyone has all the super fruits and special powders that I have.
So I've opted for a frozen tropical smoothie. I like using frozen fruits as, firstly it keeps your smoothie cold, it thickens the smoothies up and plus it stays cold and delicious for longer. So you can carry it with you and have smoothies on the go. My freezer is full of frozen fruits in bags so I can just take a handful or a few chunks at a time when I need them.
I use a Kitchen Aid to whizz up my smoothies, so for this simple recipe I had a handful of frozen mango chunks and a handful of frozen pineapple chunks. It was a gorgeous hot day, so this was my perfect tropical getaway in a glass.
Once I've added the fruit, I then add 250mls of Vita Coco Coconut Milk and leave to stand for a few minutes so I'm not just whizzing up pure frozen fruit. I give it a good whizz on the Ice Cube setting to break down the frozen chunks. Once the chunks are really small, I then put it in the smoothie setting to make it pure and smooth (as I hate lumps in my drinks).
So here is my final result. It is a stunning colour and tasted amazing. I sat out in the sun drinking it and it really started my day off perfectly.

I actually had the same again today, but I added 4 frozen strawberries to it. That's the great thing about smoothies, as you can make a different one every day, it never has to be the same and if you change the quantities of the fruits it will always taste different and unique.
